Due to a lack of artificial additives, liquid cream, which is typically found in the chilled section of grocery stores, will spoil in a few days even when refrigerated. This recipe calls for heavy cream, which cannot be made with milk. Buffalo milk makes excellent high-fat cream that is ideal for this.

Where there is no dairy industry, there are manufactured goods made with milk fats and powders. Although they work well in some recipes, fresh cream is necessary for my homemade ice cream recipe.

Without an ice cream maker, start by whipping cold heavy cream for two to three minutes, or until soft peaks form, to make homemade ice cream recipe. Once the whipping is done, condensed milk is added. To ensure a perfect mixture, make sure both ingredients are very cold before combining them. Add your optional vanilla extract at this point and whip for an additional two to three minutes, or until stirring constantly.

Vanilla extract and sweetened condensed milk work together to keep your ice cream scoop able even after it has frozen. The alcohol found in extracts prevents the ice cream from freezing solid and keeps it soft enough to scoop into your preferred bowl.

  • STEP 1

In a saucepan over low heat, stir the milk, cream, and sugar until the sugar has completely dissolved. Just heat the mixture enough so that it is hot and the edge develops a thin layer of foam.

  • STEP 2

Fill a pourable container, like a large measuring cup, with the cream mixture. Add vanilla extract after thoroughly chilling the mixture for at least two hours. (Overnight is preferred.)

  • STEP 3

Pour cold ice cream mix into ice cream maker, turn on, and churn for 20 to 25 minutes in accordance with manufacturer’s instructions.

  • STEP 4

Ice cream can be served right away once it reaches room temperature, or it can be wrapped in plastic and kept in the freezer for two to three hours to be made.

  • STEP 1

Two cans of coconut milk should be cooled down in the fridge for at least six hours, preferably overnight.

  • STEP 2

Place the coconut milk from the additional can in a saucepan. When the milk is thick and has reduced by half, add the sugar and gently simmer for 30 minutes, stirring only once. (You’ll notice that the milk starts to turn a golden color after about 10 minutes; that’s okay and exactly what’s supposed to happen.) Remove from heat and allow to fully cool.

  • STEP 3

The two cooled up cans of coconut milk should be opened. The cream should be raised to the top. Scoop the cream into a mixing bowl with care. The water below should be saved for a smoothie. Whip the coconut cream on high speed for 3–4 minutes with an electric mixer to make it light and creamy.

  • STEP 4

Condensed coconut milk should be added after whipping on high for another two to three minutes.

  • STEP 5

Transfer to a container with a lid, and then freeze for four hours or overnight. Just let it remain at room temperature for a few minutes to make it easier to scoop because this ice cream does freeze more solidly than other homemade ice creams.
